What are health issues of Vitamin C,K,minerals, and water?

I am taking a Foods & Nutrition 1 class and we have to find the health issues of Vitamins C and K. And then also the health issues for minerals and water. What are they? I can’t find them in my book.

    If they aren’t in your book, then you need to do some additional research.
    wikipedia.com is pretty good, and there are a number of good books (”Prescription for Nutritional Healing” comes to mind) with lots of information.
